Wild Alaska Roses and Rose Petal Jelly

The link above will take you to a pdf document from the UAF Cooperative Extension that tells all about Wild Roses and recipes using Wild Roses.

A friend of mine and I made Rose Petal Jelly a couple of weeks ago. The wild roses bloom for just a couple of weeks in June and if you miss them, well, they are gone. The jelly is just a beautiful color in the jars.
My friend had the pretty blue seals and rings that Ball has out right now, such a great color combination.
The first food preservation of the season. Yummy!

Now to harvest those Rose Hips in the late summer/early fall for their vitamin c goodness.

Weekly Menu Review

Quite a few of the recipes I had on our menu were new ones that I had found, mainly from Pinterest, so I thought I would give an update of our likes, dislikes and complete failures.

Sunday-- I forgot the salt in the rolls, bleech, bleech, bleech!! The same recipe is rising on the kitchen counter so we shall see how they are with salt.
Monday--The Blessings cooked and it was delicious, but I have already mentioned that.
Tuesday--I made vegetable moose soup, I love that soup
Wednesday--Dinner was almost a complete failure, we didn't care for the meatloaf or the crockpot mac and cheese
Thursday--We stayed in town too long and went starving to Sam's Club for pizza
Saturday--Steak Dianne was okay, I ended up not using this recipe but a different one.

This and That

This post does show that I really do try to keep it real.

Elisabeth received a new coat for Sundays.

101_5427

I have already posted that my husband had an emergency trip to be with family during his Dad’s surgery and hospitalization, and that before he left he brought home a cake to celebrate my birthday a day early so he could be there.

Here are the pictures. puffy eyes and end of the day hair and all. I tried to persuade my husband to not take pictures but he insisted, I am glad he did.  Here I am trying to keep Benjamin out of the cake and talk to Elisabeth.

101_5435

Benjamin blew out the candles, I just pretended with him. He likes to blow out candles. At a friends house today he wanted to blow out her scented candle…no birthday cake under there son.

Yes, I asked for a waffle maker,my Blessings like waffles.

101_5436

Now onto Thanksgiving…pie. Since it was just the Blessings and myself we chose a couple of pies to make…they chose chocolate and cherry. Elisabeth and I worked on the chocolate and Judith and I made a cherry pie.

Recipes and How I Roll

Okay, just to give you a peek into my crazy kitchen or maybe my brain, here I will post a recipe and then how I make the recipe and how it turns out.

This recipe comes to me from Pa-Pa, who got the recipe from her Aunt Helen.

Sweet Potato Casserole
3 cups yams (cooked until boiling)
1 cup sugar
1/2 cup raisins
1/2 cup coconut
1/2 cup milk
1/2 stick butter
1 tsp. vanilla
3 eggs, beaten
Mix all together until well mixed.
Topping:
1/2 cup flour
1/2 stick butter, softened
1 cup nuts
1 cup light brown sugar
Mix with fork and crumble on top of potatoes and bake at 300 degrees for 1 hour.

Now what I do:
I do not measure the amount of sweet potatoes I use. I peel and chop the sweet potatoes, usually about 5-7. I do not double anything in the recipe for the potatoes.
I double the topping and place in a 9 X 13 pan or larger. When making for Thanksgiving I use the disposable half size pans from Sam's Club.
So, I can't write my own recipes but I can mess with what others have done before me.

Biscuits

101_5300

Since beginning my quest for all things whole grain, I have unfortunately failed in the biscuit department. The good news is that I am now on my way. I have tried a few different recipes with little or no success. Then, last week, my Blessings and I were planning to invade and increase the noise at the Queen of Brussels Sprouts home. Since we were going and I had unsuccessfully attempted Kendra’s southern biscuits. (Shame on this southern born woman but not too much shame, these are whole wheat and what southern woman makes whole wheat biscuits? None that I know of, now biscuits made with White Lily Self-Rising flour, a totally different story). Back to the biscuits. That morning I ground up some soft white pastry wheat berries and took the flour with me to Kendra’s home. I watched her make those biscuits and low and behold they turned out just like mine….it was my flour!

Fast forward a few days and I try again at home. This time I used flour that I had ground from Prairie Gold white wheat berries and I put the biscuits closer together and I think they turned out pretty great. So, that pastry flour might be great for cookies, quick breads and anything else but it is not that great for biscuits. Now I know.

Putting up Food

August left many wondering if summer would be ending sooner than later. I kept telling people that it would be fine and that we would have some nice days yet. We have had a beautiful fall, I dare say the best fall in 18 years, maybe.
I have enjoyed canning and freezing garden produce or anything I can pick or buy. I have shown the pickles, dill pickles may not be my thing, I have made some jam, canned green beans, and put anything that can be frozen in the freezer. I might even try to can potatoes to extend their life. There is cabbage that is being made into sauerkraut, that is a new one for me.

Garden and Getting it Together

We had a light frost catch me unaware…I often ignore the outside world, including the weather. Much of the garden was unharmed but the zucchini, pumpkins and a few other things had to be harvested right away.

Judith pulled the carrots from her garden patch.

101_4825

Levi pulled all his corn…about 20 ears in all, not sure how many are edible but the ones we ate the other night were yummy! Probably only about one good meal here.

101_4826101_4834

I had cut about half of the celery on Saturday and this finished off the celery patch.  I have 14 1/2 quarts of celery in the freezer.
101_4839

My Mom left on Friday night so Friday afternoon to get my mind off the fact that she was leaving I created a big ole mess to distract myself. I took all of the school stuff out of the school closet for a good going through and replacement. If you are a super organized person, this probably still looks bad to you, but believe me, it is an improvement.

Sauerkraut

Since we have a lot of cabbage I thought we would give making sauerkraut a try…here goes nothing.

We used about four cabbages, Alaska sized cabbages. The cabbage was chopped and five pounds of cabbage at a time were added to our handy dandy extra large container along with 3 TBSP of salt and then the workout began. Pound, pound, pound the cabbage to bring out the water. Watching a movie helps with chopping time.

101_4716101_4717

Once all the cabbage was chopped, salted and pounded a covering of plastic wrap was added, then a plate and more plastic wrap and weights to keep that cabbage down in the cabbage water to ferment. Yep, fermenting is going on around here….for three to four weeks.
