Processing the Moose


Freezer space is, well, limited. 
The garden harvest was less than stellar so there were many empty canning jars. 
Moose meat went into jars. 
I am beginning with the finished product. 

Meat in jars is not pretty. 

Jars in the canner. I canned twenty-one quarts of meat.

    1. Soups, stews, sti fry, anything you would use a stew meat for, and the meat is cooked and ready to go.

  4. When I saw how big that moose was, I was thinking you'd need another freezer. Glad you can can it all. Is your husband done hunting for the season? What did you do with all the birds you had?

    1. Canning was definitely a freezer saver. Some of the meat is in coolers out in "God's freezer", as my husband calls the great oudoors. The birds are in the freezer waiting to be made into duck bog on cold winter days.

    2. How do you make duck bog? Do other animals ever bother your meat stored outside?

    3. Duck bog is like a duck soup with smoked susage and ground meat added and rice.
      The other animals do not because it is frozen and in coolers. By the time it warms up we will have freezer space to move it inside.

  5. Wow, that is a lot of meat, but so glad you have ways to keep it fresh, even in "God's freezer". :) I like that a lot. We are no where near cold enough for that here, but then again, we don't have as much meat as you. :D lol
